These biscotti trace their origins to Naples and the tradition of "Pane di Spagna" or “Spanish bread”. A more tender/less-crisp biscotti, made with pure butter along with an inclusion of almonds and glacé cherries. These biscotti have a similarity to Mandelbrot and are nearly a double-baked butter cookie.
