Every day for over 104 years, our handmade Scaletta breads have filled our ovens. Scaletta literally means “small ladder” in Italian, and the name refers to the back-and-forth curling the of the dough, which occurs when the loaf is formed, and gives the bread its distinctive shape. Each loaf is hand-rolled, curled, split with a razor-knife, and then very slowly baked directly on the oven hearth without a pan. The result is a rich, thick, and expansive crust with a fiber-like texture inside.
