This pistacchio pesto sauce is a delicious variation on the traditional Genovese Pesto, made with added pistachio nuts. It is an excellent and sophisticated seasoning for pasta, or just on bread for a great appetizer. It can also be used as a condiment in the making of summer sandwiches with mozzarella cheese, iceberg lettuce, sundried tomatoes and mayonnaise. One jar of this pesto with pistachio nuts is sufficient for one pound of pasta and is best not reheated: simply add to your freshly cooked pasta.
